Ingredients:
- 2 lbs chicken pieces (drumsticks, thighs, wings, or breasts)
- 2 cups all-purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 2 eggs
- 1/2 cup milk
- Oil for frying (vegetable, canola, or peanut oil)
- In a large mixing bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using).
- In a separate bowl, beat the eggs and milk together until well combined.
- Heat about 1 inch of oil in a large, deep skillet or Dutch oven over medium-high heat.
- Dip each chicken piece into the egg mixture, then coat it in the seasoned flour mixture, shaking off any excess.
- Once the oil is hot (around 350-375°F), carefully add the chicken to the skillet, being sure not to overcrowd it. Fry the chicken in batches if necessary.
- Cook the chicken for about 6-8 minutes on each side, or until it is golden brown and crispy and the internal temperature has reached 165°F. Use a meat thermometer to check the temperature.
- Remove the chicken from the oil with a slotted spoon and place it on a wire rack or paper towels to drain off excess oil.
