Roasting veggies:
Sweet potatoes, two per person
Canola oil
Salt and pepper
Dice/chop peeled sweet potatoes using a cut glove and sharp vegetable knife. Use cut glove on opposite hand that is cutting with the knife.
When holding a knife, retain a solid grip on the handle, and thumb over top of blade touching handle for guiding and control.
Cutting with the knife, cut accurately, quickly, and forcefully between the potato and the cutting board. the cutting board should not move, usually a damp towel underneath will keep it from moving. Hold the vegetable, and cut in half. Place the cut half bottom (cut end) down on the cutting board, hold knife next to knocks and firmly slice. Keep cutting until they are diced, mouth sized diced pieces of sweet potato.
Toss on a baking sheet the potatoes, and oil, sprinkle s&P mix evenly over the baking sheet, moving hand left to right over the sheet of sliced potatoes. Mix well and make sure its evenly distributed across the sheet.
Broast at 350 for approximately 15 minutes or until they slightly dehydrate. Test with thermometer that it has an internal temp of 135 degrees F.

Pull and serve with melted butter and a pinch of cinnamon and nutmeg over the sheet similar to S&P.

Damp towel under the cutting board is a great trick, thanks. Would have saved me a few curse words last night :ROFLMAO:
