Which books would you recommend to study and practice traditional european witchcraft (I'm looking for books that are both theoretical and practical)

I like:

Traditional Witchcraft a Cornish book of ways, and The Devil's Dozen, both by Gemma Gary

I would also recommend some fantasy books. Terry Pratchett did a lot of research in writing, and magic has always been taught best in story form. A story can be revisited by the deeper parts of the mind to gain more understanding. I would entirely recommend The Witches arc (including Tiffany Aching) by Pratchett. if you would like something folklore acedemic styled (that you will find often featured in Pratchett's books) you can find them in:
The pattern under the plough, and other book by George Ewart Evans and the like.

Jonathan Strange and Mr Norrel is excellent and is also a short (movie/tv) series

but in the most fullness, better than any book is to seek the great Master, He is the great initiator of this path.

Cant believe I forgot to mention the movie Outcast (2010 Director Colm McCarthy) also great Faerie focused movie.

Melusine Draco is supposed to be quite good, as is Corrine Boyer.
I'm not sure if I can reccommend the Frosts in clear conscience, anymore.
