GRANDMA'S FRIED CHICKEN

Ingredients:

  • 2 lbs chicken pieces (drumsticks, thighs, wings, or breasts)
  • 2 cups all-purpose flour
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 eggs
  • 1/2 cup milk
  • Oil for frying (vegetable, canola, or peanut oil)
Instructions:

  1. In a large mixing bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using).
  2. In a separate bowl, beat the eggs and milk together until well combined.
  3. Heat about 1 inch of oil in a large, deep skillet or Dutch oven over medium-high heat.
  4. Dip each chicken piece into the egg mixture, then coat it in the seasoned flour mixture, shaking off any excess.
  5. Once the oil is hot (around 350-375°F), carefully add the chicken to the skillet, being sure not to overcrowd it. Fry the chicken in batches if necessary.
  6. Cook the chicken for about 6-8 minutes on each side, or until it is golden brown and crispy and the internal temperature has reached 165°F. Use a meat thermometer to check the temperature.
  7. Remove the chicken from the oil with a slotted spoon and place it on a wire rack or paper towels to drain off excess oil.

Will have to try this as well when I have money sufficient to shop with.
