For magic goals the last year wormwood and sage were the most used herbs. Although I used honeysuckle, blackberry leaves and pine needles also as ingredients of a forest elixer for a ritual, stirred with a piece of deer antler. The sage was homegrown but this winter the plant died.

For tea I sometimes drink a mix of valerian (2/4) chamomille (1/4) and lavender (1/4) to have little bit better sleep. (Hot flashes in the night, perimenopause. With this mix I am able to sleep through it) If I drink pure chamomille I can't leave my tea unwatched: our beagle likes chamomille al to much.

From a very young age I adored lavender, sage and mint in one way or another. And wolfsbane too!

Not a herb, but the elders here have flowers now in the color of a white bride dress. Beautiful!

We have heather fields within 5 kms too, but I never have used heather in my magic. Can't find local/folk traditions here about it either. But maybe there are parts of the Netherlands or Belgium that have traditions about it.

White heather is used as a sprig of luck and protection in Scotland. (Removed - please do not link to webshops)

I'm not quite sure I have a favorite. I think it varies and depends on the purpose and context.

If I absolutely had to narrow it down and specifically herbs over spices... My top five would probably be Dandelion, Thistle, Stinging Nettle, Rosemary and Mugwort. Top 5 spices would perhaps be Cedar, Yew, Bergamot, Cinnamon and Garlic.
All five of the herbs listed are hardy and versatile plants. Pretty easy to cultivate and useful to have on hand.
Cedar, Bergamot, Cinnamon and Garlic are also very versatile, easy to come by and aromatically pleasing. Yew, I've always had a bit of a fixation with since I was a child and its one of my favorite trees. But then in regards to trees I also love all varieties of cedars, oaks and Pecan.

Reading your post I realise that I use Yew and Rowan a lot. Or to be more precise, they are allies. Yew grows in my front garden and Rowan is to be found in the forests.

Yesterday we planted in our garden one little verbena and some digitalis.
