make sure its a corn tortilla , toast it a bit , black bean 'refritos' ( with some fried onion and some fresh roasted and ground cumin seeds in it ) spread on top, two fried eggs on that, a sprinkling of cheese and some smoked chipotle sauce . Put it under the grill ( 'broiler' ) , add a dob of cream cheese and some chopped coriander .

OR

' Breakfast enchilada ' - 'souffle ' styled spiced scrambled eggs rolled in tortilla , sprinkled with cheese , chipotle sauce, grilled , sprinkled with chopped red chili, green and yellow capsicum, coriander and a dob of cream cheese .

Hmmmm ..... I need to go and make some now .

Fried eggs, omelettes, and deviled eggs with paprika.

For fried eggs: 3 eggs beaten with a dash of full-fat milk. Bake a few pieces of ham, some paprika, onion and mushroom in butter. When soft add the egg-mix and bake on low heat until it's done. Salt and pepper to taste

My all time favorite: egg-salad made from cooked eggs chopped, a little good mayonaise, good quality ham chopped very fine and freshly chopped chives, everything mixed very well. Add to taste a little pepper and salt. Nice to have on cream crackers or toast. In the Netherlands we have all kinds of salads like this special made for a slice of bread, toast or cream creakers. If you eat them with cream or melba crackers it is nice to enjoy it with a glass of wine alongside with it.

Yes, you are right, I like to enjoy the better parts of life a lot. I am incorrigible in that.

Cool to have another salad freak here! I love salads, especially pasta salads, but those with eggs are cool too!
